It\’s day four of our twelve days of holiday cocktails series! Today, we\’re going to make a blue curacao liqueur cocktail called Jack Frost. It has blue curacao liqueur, pineapple juice, light rum, and cream of coconut. This is a fun drink for the kids – or adults if you want to pretend it\’s Christmas morning.

Here\’s how to make it:

Ingredients:

– blue curacao liqueur

– pineapple juice

– light rum

– cream of coconut

Recipe:

1 cup pineapple juice

1/2 cup Blue Curacao liquor

1/2 cup light rum

1/2 cup cream of coconut

Rim of Glass

INSTRUCTIONS

  1. Pour a small layer of corn syrup onto a shallow plate. Place the flaking coconut in another small dish.
  2. Dip the cocktail glasses into the light corn syrup, then in coconut flakes.
  3. In a shaker filled with crushed ice, combine pineapple juice, Blue Curacao liqueur, rum, and cream of coconut.
  4. Pour the mixture into the prepared cocktail glasses. Serve immediately.

This drink is such a fun color blue, it was one of our favorites when picking our 12-holiday cocktails to feature.

Tip:

You can substitute light rum for vodka or if you really love coconut swap light rum for Malibu rum. We may try it with Malibu next time.
